Max's Restaurant is giving all-time Filipino fish favorites fine dining treatment by introducing the succulent cream dory fish on its menu this summer.
Meaty but light, firm but tender, the cream dory has long been popular for fine dining because of its excellent cooking qualities. It has luscious, white, sweet and finely textured flesh that can be baked, grilled and barbecued, fried, and steamed.
Max's is introducing the cream dory in dishes that are big favorites in most Filipino families: Sweet and Sour Fish Fillet, Steamed Fish Fillet in Light Soy and Fish Fillet in Black Bean Sauce.
The Sweet and Sour Fish Fillet is Max's version of an all time Pinoy favorite. Max's uses bite-sized cream dory that are breaded and deep fried until golden, and generously splashed with a sweet and sour sauce, gently simmered with pineapple tidbits and red and green peppers and carrots.
Fish Fillet in Black Bean Sauce uses lightly breaded cream dory fillets gently sautéed with fermented soy beans and special spices, julienned ginger and red and green bell peppers.
Steamed Fish Fillet in Light Soy is Max's take on the steamed fish that is a staple in Filipino restaurants. In this dish, Max's marinates cream dory fillets in soy sauce. The cream dory is splashed with sesame oil and steamed over high heat. It is then served with spring onion confetti.
The new cream dory dishes perfectly complement Max's existing food offerings, including Max's fried chicken which remains to be a classic Filipino favorite.
